(Patrick & Emma: ahem...breakfast wontons!!!!)
We're making good headway so far. Every morning while Rylan is eating her breakfast (she is a VERY SLOW eater. I wonder who she gets that from??? Not Steve, haha) I sit at the kitchen table with the laptop and revise, edit, and rewrite the recipes.
This weekend we plan on taking my parents out for brunch/lunch at the French Valley Airport Cafe as a belated Thank You for helping us move. It's a cute little cafe (with good food!) located in one of the terminals at the small local airport. We love sitting and watching the airplanes land and take off...even if they are tiny little Cessnas. Rylan loves it, too!

ok, so we still haven't tried the breakfast wontons, but last night we tried a recipe from a comfort food cookbook we had, and it was awwwesome. They called them Irish griddle scones in the cookbook, but they turned out more like nan the way we made them, so we're thinking about calling them "irish tortillas". OK:
Ingredients:
1 medium to large potato, cut into chunks
1 cup all purpose flour
1/2 teaspoon salt
1/2 tsp baking powder
4 Tbsp diced butter
1 1/2 Tbsp milk
1. Boil potatoes until tender.
2. Drain potatoes, return to pan- over high heat, stir for 1 minute to evaporate moisture, then mash well.
3. Sift together in a bowl flour, salt, baking powder. Cut in butter until it has consistency of breadcrumbs.
4. Add mashed potatoes, mix with fork. Add milk and mix to form a smooth dough.
5. Knead dough for about 5 minutes on a floured surface
6. Divide dough into 6 parts and roll out one doughball at a time to about a 1/4" thick
7. Fry each "pancake" in a griddle or frying pan on high with butter for 3-4 minutes per side until golden brown
Like I said, it turned out like nan and was great. Patrick is going to make it again today for lunch, but he's gonna wrap it around a sausage afterward. Still thinking on a name for that one. I took a pic so you can get an idea of what it'll turn out like, but didn't think of it until I was half finished with it, so imagine a full circle rather than a half eaten one hahaha. (If you guys don't end up getting around to making it and taking pictures and all of that, we totally understand, but wanted to pass that one on since it turned out awesome.) We're still thinking of different applications to use it in.
